With the enormous diversity of brews coming out of America’s current craft beer renaissance, it’s a shame that our beertails are still largely based on the bland light-lagers of decades past. We wanted to solve that problem by featuring some of our favorites, like this tart and hoppy cocktail.

No combination of flavors accentuates the hoppy, resinous notes of a West Coast IPA quite like those in the Chewbacca. This beertail bolsters the bitter, citrus-rind bite of the beer with copious amounts of grapefruit, and encircles the evergreen hoppiness with the gin’s lively juniper pungency. And the smoothness of the citrus-vanilla liquor will only leave you wanting more. But be warned, like coming face to face with Grizzly on a drunken hike, the highly alcoholic Chewbacca will easily overpower you.


• ½ shot Tuaca or other citrus-vanilla liquor
• 1 ½ shot gin
• 6 oz. fresh squeezed ruby grapefruit juice
• 6 oz. West Coast Style IPA—Suggestions: Deschutes Brewery’s Fresh Squeezed IPA, Dogfish Head Brewery’s 90 Minute IPA or 10 Barrel Apocalypse IPA

Combine ingredients in a chilled pint glass or flute and stir.
