This week Chef John Seymour shares his take on grilled chicken wings with bacon flavored Alabama white sauce.

Grilled Chicken wings with Bacon Flavored Alabama White Sauce

Chicken rub

• 1/4C dark chili powder
• 2T cumin
• 2T lemon pepper
• 2T kosher salt
• 2T black pepper
• 1T dry mustard powder
• 1T brown sugar
• 2t cayanne
• 2t garlic powder
• 2t paprika

Bacon Flavored Alabama White sauce

• 1 Recipe Bacon Mayonnaise
• 1/2C Cider Vinegar
• 2T Sugar
• 2T Hot Sauce, or to taste
• Salt and Pepper to taste

Bacon Mayonaise

• Bacon drippings, mixed with vegetable oil to yield 1.5C
• 2 egg yolks
• 1T Dijon Mustard
• 1.5T lemon juice
• Salt and Pepper to taste

Grilled Chicken Wings

• 24 chicken wings
• 12 slices bacon
• 2/3C Dry Rub (recipe above)
• 1/4C Scallions, chopped
• 1 Bacon Flavored Alabama White Sauce (recipe above)


Day Before
Preheat oven to 400F. Toss chicken wings with the dry rub, and return to the refrigerator. Arrange bacon on a sheet tray and bake for approximately 25 minutes. Pour off bacon drippings from sheet tray and reserve. Transfer bacon to bowl of food processor and pulse until bacon is evenly crumbled.  Divide into two equal portions and reserve. Make Bacon Mayonnaise by using a food processor. In a food processor, combine everything except oils.  With motor running slowly drizzle in bacon dripping/vegetable oil mix.   Season with salt and pepper. Also make the white sauce. In a medium mixing bowl whisk all together, season to taste.   Fold in ½ reserved bacon crumbles.

Day Of
Preheat one side of the grill to medium-high heat. Add wings and cook until they begin to get color.  Move to cooler side of grill and finish cooking until 165F (approximately 20-25 minutes total). Remove from grill and toss with white sauce. Garnish with remaining bacon bits and sliced scallions.
