Chef Ray Lampe is the famous Dr. BBQ, and has appeared on Chopped. This week, he shares his desert take on quesadillas, with a grilled chocolate apricot quesadilla.

Grilled Chocolate Apricot Quesadillas


• 6 oz Spreadable cream cheese, at room temperature
• 1 ½ cup Semi-sweet chocolate chips
• 16 each Vanilla wafers
• 16 each Dried apricots, cut into small pieces
• 8 each Medium flour tortillas


Prepare the grill direct or a frying pan at medium heat. Spread a thin layer of the cream cheese on one side of all the tortillas. Sprinkle the chocolate chips on one half of each of the tortillas, distributing evenly among them. Sprinkle the apricots on the opposite side of the chocolate chips, distributing evenly among the 8 tortillas. Place the vanilla wafers in a zip bag and crush them with the bottom of a sauce pan. Sprinkle them over all the tortillas. Fold the tortillas in half. Cook the tacos for a minute or two on each side until warm and crispy. Serves 8.
