Jakob Moore from One Caroline St. Bistro & Bar in Saratoga Springs, New York shares with us his herbaceous and floral gin cocktail that features the creamy texture of an egg white.
1½ oz. Nolet’s Silver Dry Gin
½ oz. green chartreuse
¼ oz. lavender simple syrup
1 egg white
3 dashes of grapefruit bitters
Combine egg white, lemon, and bitters in a cocktail tin and dry shake for at least one minute. Add rest of ingredients and dry shake again for at least 30 seconds. Add ice and shake for 30 seconds. Strain into cocktail coupe and garnish with Lavender sprig
