Tailgate Gourmet: Joe Isidori’s All-American Burger:

This week’s recipe is from Chef Joe Isidori, the co-partner and chef at Black Tap Craft Burgers & Beer. Chef Isidori has given us this burger recipe, because there’s nothing like the perfect burger — complete with special sauce — on game day.


Black Tap’s All-American Burger w/ Special Sauce

Serves 4

All-American Burger:

• 4 Potato rolls
• 2 lbs High quality ground beef
• 4 slices American cheese
• Little lettuce gem
• Tomato
• Ba-Tempte half sour pickles
• Special Sauce


Black Tap’s Special Sauce:

• 1 cup Mayonnaise
• ¾ cups Ketchup
• 1 tablespoon Worcestershire sauce
• 1 each Chipotle pepper diced
• ½ teaspoon Sriracha
• 1 Kosher Dill (diced)
• 1 tablespoon Pickle Juice

Split beef into four 8 ounce patties. In a hot cast iron pan cook patties to desired temperature, roughly 3 minutes per side for medium rare. While the patty is cooking, make special sauce (combine all ingredients and mix with whisk). Place cooked patty on bottom bun, top with American cheese, lettuce, tomato, special sauce
