As many of you know, I have two loves: food and the Boston Celtics! And during the basketball season, they go hand in hand in my house. There is nothing better than eating delicious food and watching the Cs kick some ass on the court. I'm going to share some of my favorite finger foods that are sure to have your friends coming back for more.
One of my all-time favorites is wings, fried of course! There is something about a crunchy fried bird that tastes oh-so-good. To start, I let my wings marinate in buttermilk mixed with a few drops of Texas Pete to get that extra-spicy kick. For the breading, I use Panko breadcrumbs mixed with flour, garlic powder, salt and pepper. I know it sounds easy, but the simplest recipe is sometimes the best. I have a deep fryer at home, but if you don’t, please be careful! Deep frying at home can be really dangerous.
What kind of party would it be if it didn't have any Asian flavor? I’d say boring! I make a mean ground pork Rangoon that’s always a hit with my friends. It’s a fried finger food (similar to a fried wonton) filled with ground pork and seasoned with fresh garlic, fresh ginger, sesame oil, soy sauce, minced yellow onion, salt and pepper. Let your guests know Asian persuasion gave you the recipe!
Foil-wrapped roasted potatoes on the grill are a good starch to throw in the mix too. For flavor, season potatoes with olive oil, fresh rosemary, fresh garlic, salt and pepper. Let them cook over the grill and serve with toothpicks so your hands don’t get messy. Potatoes are my weakness…Gosh, I love them!
Now I don’t know about you, but I love tuna. When I’m whipping up a smorgasbord for the game, mini tuna cakes are a necessity for me. Mine are rich, salty, crunchy and have a nice sweetness to them. It takes about two cans of tuna (I use solid white), onion, bell pepper, Dijon mustard, Worcestershire sauce, eggs, mayonnaise, a splash of lemon juice, garlic powder, cayenne pepper, salt and pepper, and cracker crumbs to mold the cake together. Throw all the ingredients in a bowl, form the cakes, dust with flour and fry away. If I know you’re having tuna cakes at your party, I'm there!
When all else fails, you can never go wrong with a burger bar. A mini-burger bar, that is! Gather all your favorite toppings as well as things you may not have tried before to mix things up. Some of my must-haves are guacamole, caramelized onions, sautéed mushrooms, watercress, banana peppers, tomatoes and goat cheese. My mouth is watering just thinking about it! The bar will give your guests a build-it-yourself experience. It’s fun, it’s easy, and it’s not just your typical cheeseburger!
