Signature drink: el corazón (a passion fruit and pomegranate margarita made with Corzo silver tequila served in a glass rimmed with salt and cracked Tellicherry peppercorns)

Any man who refers to his own drinks as "gastrotails" (as in gastronomic cocktails) sure as hell ain't gonna be pouring sex on the beach for frat boys. Seger learned mixology from the legendary Max Allen Jr. at the Seelbach Hotel in Louisville; worked with Michelin-starred chef Serge Knapp in Strousbourg, France; learned about the importance of fresh ingredients from "perfectionist" Thomas Keller at the French Laundry; and fine-tuned his skills behind the bar at Tru in Chicago before landing at Nacional 27. He is dedicated to stimulating appetites with his drinks instead of overpowering meals. He makes his own simple syrups from red and white wines (to add "grape's acidity"), creates his own bitters and experiments with seasonal ingredients (including white truffles). His signature drink, the el corazón, is basically a passion fruit and pomegranate margarita with a special mezcal floater: Seger cuts a lime in half, squeezes out the juice, turns it inside out and pours a splash of premium mezcal into the "lime boat."
