Everyone knows the four cornerstones of Wisconsin life are cheese, beer, the Packers and the butter burger. Solly's, just north of Milwaukee, has long been the master of that last one: the most well-lubricated Midwestern invention since the Model T. What makes it so slippery? Could be the fresh sirloin patty, ground in-house. Or the deep-brown stewed onions. Or maybe it's the entire tablespoon of real Wisconsin butter slathered on the bun. If you're having trouble imagining just how much that is, consider this: If you don't eat this decadent creation fast (and you will eat it fast), the flimsy bottom bun turns into something resembling a wet towel. What you do with the remaining butter on the plate is your business, but you will need many, many napkins from the metal boxes on the yellow horseshoe counter. As one patron says, "Solly's burgers taste almost homemade, like someone's mom made them in an electric skillet, just for you." Yeah, if Mom were trying to kill you. Besides, as folks love to point out, Solly's is conveniently located next to the Heart Hospital of Milwaukee. These cheeseheads have a sick sense of humor.
