Everyone knows that one of the best kinds of breakfast feasts is cold, leftover pizza. Even better? Breakfast pizza, complete with eggs, avocado and bacon. The guys over at Food Steez have created the ultimate morning nosh.
Chorizo Breakfast Pizza
• 2 cups pepper jack cheese, grated
• ½ lb chorizo
• 10oz store-bought pizza dough
• 1 ripe avocado
• 2 eggs
• ¼ cup cilantro
• ½ lb. bacon
Pre-heat the oven to 450 F Degrees. Remove dough from packaging, cover with flour and let sit for 30 minutes. While dough is setting, heat up a medium saucepan to medium heat and cook bacon until crispy. Remove bacon and set aside. Next, add chorizo and cook chorizo for 4 to 5 minutes. Set aside and let cool.
Once dough is settled, rip off small pieces of dough from your larger piece of dough into palm sized circles. You’ll want these pizzas to be thin. Work the dough with your hands, pressing it firmly on your floured surface and molding it until you’re able to flatten the dough into a small pizza. Create a small lip at the edges of your pizza. Add shredded pepper jack cheese, chorizo, bacon bits and let cook for 8 to 10 minutes. Make sure to keep checking your pizza so it does not burn. You want the dough to be golden brown when finished.
One minute prior to taking your pizza out of the oven, crack an egg in the center of the pizza. It helps if you create a divot in the middle of the pizza by shifting your toppings around. This will help prevent the egg from dripping off of your pizza. Continue to cook with egg for about a minute and then remove from oven. Top with minced cilantro and enjoy!
