In this episode of Let’s Get Fat, Chef Kris Morningstar of Terrine in Los Angeles shows Playboy senior editor Jeremy Repanich how to make their burger, which is stuffed with truffle butter and topped with foie gras. You read that right: it’s a burger stuffed with truffle butter and topped with foie gras. To achieve this decadent feat, Morningstar begins with 7 oz of grass-fed beef, which is molded around truffle butter and topped off with salt and porcini powder before being cooked about three minutes on each side. The burger’s onions are diced In-N-Out style, and the buns are toasted in the pan with the burger drippings (so no fat goes to waste). A sage aioli—made with lemon juice, garlic, grape seed oil and sage—is spread on the bottom bun, where the chef also adds a couple slices of concentrated tomatoes. Crispy shallots, frisee and foie gras top it all off.
