In this episode of Chef Tips, Jeremiah Stone from Wildair restaurant shows us how to properly sharpen a knife on a wet stone. The process begins with a stone that has been soaking in water on a towel. (These stones come in different grits, ranging from as low as 300 to as high as 8,000 for polishing). With two to three fingers, you’ll apply even strokes for the length of the stone. Chef Stone also demonstrates the swiping motion you’ll need to sharpen the knife’s tip.
