To make the mozzarella by hand, Bazdarich begins by cutting fresh curd into strips and using a wire rack over them to add texture. The cheese is then transferred to a large bowl, where it sits in 185-degree water for about 15 minutes before being seasoned with salt. After kneading the mass with a spoon and pouring the water off, the cheese is formed by gently folding it over to make a ball, pinching it off at the bottom, and placing it into cold water.
