The potato is the foundation of some of the most satisfying dishes known to man, from french fries to mashed potatoes. But lately enterprising chefs are getting more uber with the tuber. Take, for instance, Jose Andres at the Bazaar in L.A. His spin on patatas bravas (above) involves hollowing out small potato cubes and filling them with aioli and smoked paprika.
