Armed with five standards and three originals, Wilbur de Paris and His "New" New Orleans Jazz (Atlantic 1219) explains some of the cracked plaster and low-down rumblings you're liable to hear most any night inside Jimmy Ryan's, that moss-covered patio in the Bayou country around West 52nd Street.
