Ever since a sated English monarch laid his blade on a tender side of beef and dubbed it Sir Loin, steak has been the trencherman's cut. Beefsteak clubs flourished in 18th Century London--the most famous being the Sublime Society of Steaks, founded in 1735 by eminent theatrical personality John Rich.
